James Trevaskis and Oliver Stephens have both returned to the
Isle of Wight to run the restaurant and kitchen at the Priory Bay Hotel. James and Oliver started their careers at Priory Bay and then went on to hone their skills in London, Paris and . Copenhagen
James joins us from the Michelin-starred Gauthier Soho, where he was Head Sommelier. He looks forward to building a unique wine list with an emphasis on natural wines which are chosen to match and enhance Oliver’s menus.
Oliver returns as Head Chef, having previously worked in our London Michelin-starred restaurant, at The Crillon in
Paris and for the past two years at Noma in — voted the best restaurant in the world for the last three years. Copenhagen
